CAVIAR RUSSE MIAMI

The Caviar Russe Restaurant and Bar in Miami will officially open its doors in February 2016, helmed by renowned Chef David Valencia, a veteran of Alain Ducasse.  The menu will feature caviar, raw bar and crudo inspired cuisine with Madison Avenue signatures. Chef Valencia will also introduce a variety of new caviar inspired creations that will culturally represent it’s diverse new home.

The restaurant will offer an elaborate selection of caviar from which to choose, served atop crushed ice, accompanied by house-made crepe blinis, creme fraiche and chives, in servings from 25 to 250 grams, featuring various decadent caviar assortments such as “The Classic” (Classic Caspian Sea Osetra, Siberian Sturgeon and Pacific Sturgeon) and “The Prestige” (Platinum Caspian Sea Osetra, Gold Caspian Sea Osetra, and Classic Osetra) allowing caviar aficionados to explore and taste a range of varieties.

Adding to the unrivaled caviar selection there will also be seasonal crudo, tartare and raw bar selections showcasing such delicacies as  Blue Fin Tuna, Santa Barbara Sea Urchin, and Florida Stone Crab, to name a few.

For the ultimate luxury dining experience, Caviar Russe will offer an indulgent Multi-Course Caviar Tasting Menu comprised of six different varieties of imported caviar presented as a tasting menu of composed dishes, where each course will continuously evolve based on the season and on Chef Valencia’s inspiration of the finest local and imported ingredients.  The menu may feature dishes such as Bluefin Tuna with Nasturtium, Creme Fraiche, and Caspian Golden Osetra; King Crab with Avocado, Lemon, and Caspian Classic Osetra; Diver Sea Scallop served with Parsnip, Vadouvan, and Siberian Sturgeon. The Caviar Tasting Menu will begin at $395 per person.

To complement the caviar and culinary offerings, a well-curated wine and champagne list including special vintages of Dom Perignon Oenotheque, Taittinger Comtes De Champagne, and Krug Clos du Mesnil. Caviar Russe will also present an extensive vodka menu with more than 20 variations representing nearly every major producer in the world and will also introduce Caviar Russe crafted cocktails that will be sure to set the mood.

The Miami Restaurant decor is definitely opulent, offering a warm and inviting, luxuriously appointed backdrop to savor and imbibe the celebratory offerings of Caviar Russe. The space is comprised of an intimate 35 seats in the ground lobby of the Four Seasons Tower, designed by David Mexico, of the David Mexico Design Group NYC, creating a celebratory environment of sophisticated luxury best befitting the main event…Caviar!

Straight from the entrance, the message is clear, where guests are greeted by ornate Art Deco inspired bronze gilded intricately designed screens inspired from the effervescence of champagne, and surely serve the appropriate welcome.

The Bar at Caviar Russe boasts an impressive Calacatta Gold marble arch and seating for 7 facing the open kitchen from chic white leather and gold adorned bar stools, where Crystal decanters hang as pendant lights from above to provide a soft gold illumination.

The Dining Room is ensconced by a gold leaf gilded dome from which a delicate chandelier of hand blown glass bubbles acts as the centerpiece. Contemporary Pearlescent Italian leather dining chairs with detailed leather tooling accents gather around the various marble tables throughout the space to provide separate conversation areas. Individual banquettes in caviar-like patterned leather with tufted velvet backs, provide additional privacy for intimate gatherings of 2 or more. Magnificent custom bronze pendant light fixtures surround the dining room, in the shape of oversized bubbles, adding further warmth to the carefully cultivated mood.

Sheer draperies are patterned as well to continue the reference to caviar and champagnes with a subtle spherical pattern to add background drama.
